This week we decided not to order our groceries yet since we knew the shelves wouldn’t be well stocked because of the snow storm last week! We’ve been doing a mix of ordering out and also just using up whatever is left in our fridge and freezer, which is not much! 🍞 I saw that we had organic cheddar cheese, tuna, and paleo bread on hand, so I decided to put together a tuna melt situation! I wasn’t super excited about it while I was putting it together, but it came out SO GOOD! 🤤 Plus, it was so easy to put together! I made a super simple tuna salad using @wildplanetfoods canned tuna, @primalkitchenfoods mayo, black pepper, garlic powder, and Himalayan salt. I toasted the @baseculture soft sandwich bread slices, then layered one of the slices with the tuna salad and a slice of cheddar cheese (use dairy-free cheese to make it paleo). I placed it back in the oven to broil on low to melt the cheese and that’s it! 😍
I love this community so much and felt all the love from those of you who reached out yesterday and today! ❤️ Let’s get back to some good food inspo! 😊 Last week when we went to go stay with my sister and BIL at their home, they made us a super yummy dinner that included this herby baked salmon made by my sister @purevidalinzita! Luckily there was some of that salmon leftover, so I decided to put together an easy lunch a couple of days after. I paired the delicious herby salmon with some pesto pasta and roasted (burnt-ish) brussels sprouts! 🐟 I used the @jovialfoods grain-free cassava penne pasta and tossed it in some dairy-free @seggiano pesto (my favorite)! For the roasted brussels sprouts, I tossed them in olive oil, seasoned them with salt and black pepper, and baked them in a 450 degree oven for about 25 minutes. Everything came out delicious and I’m so craving this meal right now! 🤤
✨REAL TALK✨
We made a few meals last week on the grill with our cast iron skillet and I think we were most excited about this one! 😆 Luis bought some brioche bread from @naturalgrocers before the winter storm hit and was so excited to try some french toast using the bread, but then our power went out! The day before, I made it a point to watch Luis prep the grill and light up the charcoal so that I knew how to do it the next day. 🔥 I really wanted to make him the french toast because he had been so excited about it! The next day I took it upon myself to get the grill going (still with a little of Luis’s guidance because I wanted to make sure I wasn’t going to burn the place down 😂) and made both of us some french toast! OMG. The french toast came out SO GOOD! 😍 For the egg mixture I used 2 eggs, about 2-3 tbsp of french vanilla @nutpods, cinnamon, and maple syrup. I just dunked the brioche bread slices in the egg mixture and placed them in the cast iron skillet with @fourthandheart ghee to fry up both sides. I also sautéed up some banana that we had and finished it off with a drizzle of maple syrup! 🤤 We served the french toast up with some crispy @vitalfarms eggs and that was brunch! ✨
Happy Monday! 🤍 It was quite the week last week here in Texas! That first night that the snow arrived, we were SO excited. ❄️ We prepped ahead of time by purchasing lots of groceries to make sure we didn’t have to leave the house for the next couple of days, which was made up of mostly perishable items! Little did we know what was coming. 🙃 The next day, we woke up with no power. The water got shut off not long after the power. We had to get creative! We didn’t want our food to go bad, so we put what we thought were essentials into whatever cooler bags we had outside and left them out on the porch. We also decided to whip out our grill and cast iron skillet and use them to cook our food! 🍳 Inside our condo, the temperature would fluctuate between 42 and 45 degrees. We wore layers on layers on layers of clothing! I think I wore 4 pairs of sweaters, 3 pairs of pants, 2 pairs of thick fuzzy socks, and sometimes my beanie and scarf! 🙈 Luckily we had found some firewood that we kept in our fireplace, so we lit a fire to help warm up on the coldest night! Our cats were so over the cold, as you can see in their photos. 😹 We lasted 67 hours with no power and 22+ hours with no water. We eventually made the decision to head over to my sister and BIL’s place to stay for a couple of days, who kindly opened up their home to us and our cats! I almost feel guilty sharing about our power and water situation because I know many other people had it waaaay worse than we did. We are very lucky that pipes didn’t burst in our home, no flooding in our home, we didn’t lose our home and our belongings because of flooding in our home, we had help from family, etc. Sending so many prayers to those who are suffering through the aftermath of the winter storm. 🙏🏽

PALEO CHOCOLATE STRAWBERRY CEREAL BARS ❤️
A simple, veggie-filled breakfast is all I need in the morning! 💛 Onion, bell pepper, spinach, and mushrooms are usually my go-to veggies to add to my egg scramble. 🍳 I also like to add in whatever protein I have on hand, like chorizo, sausage, bacon, or hot dogs! In this egg scramble, I have onion, bell pepper, mushroom, @applegate hot dogs, and @vitalfarms eggs. 🧅 I topped it with some @sonomabrinery sauerkraut and served it with some avocado on the side (always). 🥑 I’ve been buying these @strongrootsusa cauliflower hash browns for months now and I’m obsessed! 😍 They aren’t paleo because they have some corn starch in them, but if you are fine with the corn starch, I highly recommend them! I usually make them in my convection oven on the air fryer setting at 400 degrees for 15 minutes, flipping halfway. They come out perfectly crispy and delicious! 🤤
A simple bunless burger and fries is one of my favorite meals to make at home! It’s just so easy, customizable, and always tastes amazing. 😍 I like to wrap mine in some butter lettuce, but I didn’t have any on hand. I have a @traderjoes bison patty topped with some organic sharp cheddar cheese and sauce! For the sauce, I mixed together some @primalkitchenfoods mayo and ketchup together. 🍅 Yes, I know these sweet potatoes aren’t shaped like fries, but I call them fries because I dunk them in ketchup! 💁🏽‍♀️ I roasted them in my air fryer at 425 degrees for about 15-18 minutes. Last on my plate is a pickle spear from @grillospickles that I cut in half. I loooove these pickles! Plus, they have super simple ingredients! 🙌🏽 You can easily make this meal paleo and Whole30 compliant by leaving out the cheese and adding some other fun toppings! 😊 Sometimes I get fancy with the bunless burger toppings and sometimes I keep it simple!
