I personally love to see what other people eat in a day because it brings me lots of inspiration! I always end up wanting to create something super yummy in the kitchen and love to see what products or foods people like to incorporate into their meals. When I’m not Whole30ing, I follow a paleo way of eating because that’s what works for my body! I’ve been noticing that lately I’ve been getting hungrier throughout the day and sooner than usual. I’m going to start increasing my food intake at each meal that way I stay satiated throughout the day! I definitely don’t calculate the calories or macronutrients that I eat on a daily basis because I personally believe in eating nutrient dense foods and not counting calories. When I build my meals, I always make sure that I have a well-balanced plate of food. Don’t get me wrong, there are days where my meals are not perfect and not as balanced as I’d like because that’s just real life! I like to have a good amount of protein, healthy fats, vegetables, and carbohydrates on my plate. Sometimes my meals end up being low carb and that’s okay! I just listen to my body and give it what it wants! If it’s feeling like having more carbs, I’ll give it more healthy carbs. If it’s not feeling the carbs too much, then I’ll hold back on the carbs. Another thing I want to point out is that I won’t always only eat one portion of food. I’ll serve myself my usual serving and wait a little while after to see if I’m still not full. I’ll ask myself if I’m truly still hungry or if I’m full and, if I’m still truly hungry, then I’ll eat another portion! I know many of us think that we are only supposed to have just one portion of food and that’s it. LISTEN TO YOUR BODY! If you are still truly hungry after your first usual portion, eat another portion because your body needs it. Nourish your body! Let me give you the details on what I ate in a day!
Ya’ll know I love a good breakfast hash. Today I made my hash the way I like to and just ended up making it into a scramble by adding the eggs in. I honestly have a breakfast hash or breakfast scrambles almost every single day for breakfast because it’s just easy and I always switch up the protein and veggies that I put in it! It’s filled with veggies, healthy fats, protein, and yummy toppings! I added a little avocado oil to the pan and sautéed 2 slices of Garrett Valley turkey bacon, onion, bell pepper, mushrooms, some Cascadian Farm root veggie hash, and a gigantic pile of spinach. I seasoned everything with a little Himalayan salt and black pepper and added in 3 Vital Farms eggs. I usually only add in 2 eggs, but since I’ve noticed I’ve been getting hungry earlier throughout the day, I decided to add in an extra egg to see how I feel! I scrambled everything together, plated it, and added some goods on top! I topped the scramble with Wildbrine sauerkraut, homemade pico de gallo, and a generous drizzle of Frank’s Red Hot original hot sauce! YUM!
For lunch, I reheated some leftovers that I had on hand from a couple of days ago. I made the Sloppy Joe recipe from the Eat What You Love cookbook by Danielle Walker a couple of days ago and it’s so good! I’ve made it a couple of times before already and still make it for us often because we just can’t get enough. The recipe calls for some coconut sugar and honey, but I’ve always made it without the sugars and it’s still super yummy! I also roasted some veggies to have with the sloppy joe leftovers. I chopped up some Brussels sprouts, a little bit of cauliflower that I had left, and broccoli, tossed them with avocado oil, and seasoned them with some Paleo Powder Pink seasoning. I roasted the veggies at 450 degrees for about 15 minutes or so in my mini oven until they were nice and crispy! Super easy and delicious! I had a GT’s Guava Goddess kombucha on the side, which is soooo good!
I had been craving chicken tenders for the longest time! I finally made some today and they definitely hit the spot! I went with buffalo chicken type chicken tenders. I basically just dumped a bunch of stuff onto plates and in a bowl and hoped for the best! I never really measure anything, so I honestly have no idea how much of each ingredient I used! I dumped some coconut flour onto a plate and whisked 2 eggs with Frank’s Red Hot original hot sauce in a small bowl. On a larger plate, I dumped some almond flour with chili powder, paprika, onion powder, garlic powder, black pepper, and Himalayan salt and mixed it all together. I first dipped the tenders into the coconut flour, then into the eggs, and lastly into the almond flour and spice mixture. I placed them all on a parchment lined sheet pan and backed them in a 350 degree oven for 25 minutes. I also roasted some potatoes to have on the side! I cut some red potatoes into matchsticks, seasoned them with Paleo Powder Pink seasoning, and baked them in my mini oven at 450 degrees for about 12 minutes. Perfectly crispy! Of course, it wouldn’t be a complete meal without some Primal Kitchen ranch dressing and spicy ketchup. I did some recipe testing and made these yummy brownies, so I had to have one as a dessert! I used a few simple ingredients and will definitely be making these again to share the recipe with you all!
